BETTER BUTTER BEEF

The meat from this recipe truly melts in your mouth with its sumptuous buttery flavor and fork tender bites. Who would think that all of that goodness could come from only three ingredients? Oh, but it does and it will satisfy even the most ferocious of appetites. This dish is comfort food at its finest!


Servings: 6-8

Prep time: 15-25 minutes (depends on whether soup mix is already made)

Cook time:

Crockpot - 8 hours on low
Pressure Cooker - 1 hour (assuming 20 minutes per pound)
Oven - 6-8 hours, covered, at 200 degrees

Skill level: Easy


INGREDIENTS

  • 3 pounds CHUCK ROAST

  • 1/2 cup unsalted or regular BUTTER, unmelted

  • 5 Tablespoons homemade dry HEALTHY ONION SOUP MIX

DIRECTIONS

  1. Place beef into slow cooker, pressure cooker (use trivet to raise the meat to avoid “burn” message), or dutch oven.

  2. Put butter on top of the beef (no need to spread or distribute it).

  3. Sprinkle onion soup mix evenly over butter and beef.

  4. Select a cooking method (see “cook time” above) and follow the prescription.

  5. When chuck roast is tender and cooked to desired doneness, serve with favorite side dishes.

  6. Refrigerate any leftovers.


NOTES/VARIATIONS

  • This recipe will double comfortably. Cooking times will remain the same for the oven and crockpot. Add 20 minutes for every extra pound of meat if using an instant pot.

  • If not using homemade butter, grass-fed is an especially delicious and nutritious choice.

  • Adding vegetables such as properly prepared mushrooms, diced onions, celery, carrot, and/or peppers is an option but it will change the flavor profile of the recipe and the water from the vegetables will change the butter “gravy”. For this reason, I recommend making it according the the original recipe one time first before experimenting so as to experience the full essence of the dish.

  • Excellent side dishes include mashed potatoes, oatmeal, grits, cooked carrots with honey or maple syrup.
